Apple Brie Pie

Serves 8 – 10

You will need:

1 kg Brie Cake
550 grams Puff Pastry rolls (two packs)
4 red medium sized Apples
4 – 5 tbsp cane sugar
150 gram salted butter
2 tbsp cinnamon
an endless amount of love

1. Peel, core, and chop the apples into 1 cm cubes
2. Place the apples in a frying pan, add the cinnamon, butter, and sugar, and place on stove on medium high heat for about 10 minutes or until apples soften and butter and sugar have caramelized. Set aside and let cool. 

3. Take a sharp knife and slice through the Brie cake cutting into half.  This is quite tricky seeing that the Brie is super duper creamy on the inside and so even though you are cutting through it, you need to be lifting the upper half as you are cutting through it so as to stop it from glueing itself to its lower half. You may need a helping hand on this one!

4. Preheat the oven up to 180 degrees Celsius. 
5. Take both rolls of the puff pastry and roll the last ten cm of one sheet on top of the first 10 cm of the other sheet of puff pastry. Then, with a rolling pin roll the sheets out to a size that will accomodate the Brie cake, if you choose to bake a smaller Brie cake, then adjust your ingredients accordingly. 
6. Once you are done rolling your puff pastry, place the lower half of the Brie cake onto the puff pastry bedding. 
7. Start spooning the caramelized apples onto the half of the Brie Cake that is on the puff pastry bed and then lay the other half of the Brie on top.


8. Gently start folding the puff pastry around the Brie cake to your desired shape. Some like to cover the Brie completely…I like to show a bit of the Brie, I think it looks prettier and it gives me room to be a little more creative with the center. But of course, you may do as you please.


9. Lightly beat the egg in a small bowl and pencil the egg on the cake. This will give the dough a lovely tan!
10. Bring an oven tray, place a sheet of parchment paper, and then lay the heavenly Apple Brie Pie onto the tray and put it in the oven. Leave it in the oven for 20 minutes and until the Puff Pastry has turned into a nice golden color. 
11. Once you have pulled the pie out of the oven, let it cool for about 10 minutes. If some of the filling and the cheese have managed to ooze out the fort knox fold….fear not! For it just looks even more scrumptious!!


Enjoy this dessert with a good cup of either Rooibos or Black tea (personally Rooibos lifts the flavors in this Pie to a whole other level). ooooh and dont forget to drizzle some honey on top of your slice of pie- really enhances the flavor. Luxuriate!!
